With Infini meaning “Limitless Possibilities”, Chef Urvin wants to offer dishes made without boundaries, exploring new possibilities and stepping with two feet outside the box. A chef’s table concept where diners and staff are able to interact throughout the evening, channeling through a story guided by the menu.
Before he started his own restaurant, Urvin built his resume working in different roles starting as an apprentice cook and ending as a Chef de Partie and Sous-Chef for different of the highest-rated hotel restaurants on the island of Aruba. But also gained experience in Europe working with 1-Michelin star rated “Grand Hotel Karel V”. Once Chef Urvin decided to follow his heart and open his first own restaurant, the Philosophy that Urvin held was and still remains; to promote Aruba as a culinary destination. Chef Urvin sticks to traditional recipes but works with modern techniques in order to create a new higher standard for existing dishes.
He enjoys buying many of his ingredients from local farmers, who have a passion for food and take their significant role within the final product served in the restaurants really seriously. It is a combination of all the aforementioned, which is reflected in the dishes created at Chef Urvin his restaurants. When meeting Chef Urvin you will immediately notice that he is A Chef at heart. Of course, he has many accomplishments, which aside from his culinary degrees also include several medals and he is also locally famous for being the first winner of ‘Iron Chef Aruba’.

With his last two new ventures, Infini and Po-Ké Ono both established in 2020, Chef Urvin broadens his culinary craft to new niches. Prior to venturing into his personally developed concepts, Chef Urvin built his resume working in different roles, starting as an apprentice cook and ending as a Chef de Partie and Sous-Chef for a number of the highest-rated restaurants on the island. He also gained experience in Europe working at Grand Hotel Karel V, a popular Michelin restaurant in Utrecht, the Netherlands. The philosophy that Chef Urvin follows and firmly believes in from the moment he decided to follow his heart and open his very own restaurant, is still being upheld and remains: To promote Aruba as a culinary destination.
Chef de Cuisine Ashwin’s love for cooking started at an early age. He was raised in the kitchen of a household where both his mother and aunt loved to cook delicious and heartwarming meals. Over the last 12 years, Ashwin worked at several two-starred-Michelin restaurants in the Netherlands and alongside some of the most reputable chefs including Moshik Roth, Francois Geurds and Dennis Huwae.
Maître D’ with a passion for food and fortified with more than 10 years of experience in the hospitality industry, Jessika most recently spent 4 years at a well-known restaurant Daalder in Amsterdam where she worked as the maître. As your maître, Jessika looks forward to sharing her passion for fine dining and modern cuisine with you – in Infini’s own and unique way.
For the past 2 years, Jeanclaude worked at the Ritz Carlton Aruba in the pastry department where he learned everything from basic pastry techniques to exploring flavors and creating his own recipes. Prior to that, he also worked with Chef Urvin at The Kitchen Table by White. At Infini, he promises to create new desserts with a playful take on colors and flavors, unlike anything that guests have ever tasted before.
